Cucumber Pickle (excellent in sandwiches)

3lbs ridge cucumbers, after peeling and slicing
1lb med.onions finely sliced
2 green peppers, halved, seeded and shredded
1 1/2lbs salt (approx)

Pickle:
10oz brown sugar
1 1/2oz mustard seed
1 tsp celery seed
1 tsp tumeric
1/2 tsp ground mace
1 pint white wine vinegar

Put the vegetables in layers in a bowl, sprinkling well with the salt. Cover and leave 2-3 hours. Drain, rinse with cold water and drain again.
Meanwhile, put all the pickle ingredients together in a pan, bring to the boil
and boil for 2 mins.
Add the drained vegetables and bring again to boiling point, stirring well from time to time.  Allow to cool, jar, seal and label. Enjoy.  Mrs Bouquet

mmmm sounds yummy, shame only got 1 cucumber off my plant!!

Sorry, I should have put that.  I cut mine into smallish cubes, so that when its made up it resembles a
chunkier version of sandwich spread, but don't over cook or it will go mushy.  Good Luck, let me know!  Mrs Bouquet

Oh chick chick doesn't it make you laugh you got 1 cuc and I got 1 courgette off 3 plants.

:lol:  :lol: but i did get a million  :cry: courgettes out of my hundred plants, big mistake!! :roll: shame as we love cucumbers and not so keen on courgettes especially now!! :lol:  :lol:

Actually we don't like courgettes very much either.  Did you grow the ridge ones ?  We grew ridge and femspot together in the greenhouse.  We had about 7 off the ridge, which were lovely and tasty, with a nice crunchy texture, and so far 3 on the femspot, which were about 16" long and looked like shop ones, but which weren't as tasty.  However, there are still about 4 to come.  They seem to have developed a second life, which is more than I can say for me !!!  (now I've read my post, I mean cucs).  See you,  Mrs Bouquet  :roll:  :roll:  :wink:  :wink:
