Why are eggs not refrigerated?

Before purchase by the consumer, EC legislation requires that eggs are stored and transported at a preferably constant temperature. This is current practice within the UK egg industry and the reason why the majority of retail outlets' egg displays are not refrigerated. Changes in storage temperature and humidity can lead to condensation forming on the egg shell which can cause mould growth together with the possibility that any bacteria may infect the eggs as a result. After purchase, the consumer is advised to refrigerate the eggs to maintain freshness and reduce the possibility of bacteria growth resulting from exposure to the temperature and humidity variations of the domestic kitchen.

I DID the following but wont be from now on.
I would collect my eggs and place them in the fridge.  The next morning they would come with me to work (an hours journey) and either sit on the purchasers desk or my desk all day then go to there new home.  After that I do not know.... they could end up in the fridge or not.  The odd person takes 6 eggs every two weeks so they could sit none refrigerated for two weeks after being refrigerated for 12 + hours!!

Hope this may help others not make the same mistakes that I have made.  Oh and sorry if you know this already but I am not trying to teach you to suck eggs.

i always thought you shouldn't refridgerate eggs in case they were fertile, bringing them back to room temperature and things might happen, (bit like me really)

We would not put you in a fridge anyway TMG, on the warming you up and seeing if anything will happen.  I will have to gracefully pass on that offer :lol: as I am getting married on the 13/12/08.

there are methods for freezing but think the egg has to be seperated and sugar or salt added... some distant memory tells me....

Will stop refrigerating our eggs me thinks!
