G’Day All!

DELIA SMITH’S RICE

Ingredients

1 small brown onion, finely chopped
1 tbsp sunflower oil
1 mugful Basmati rice, or preferred variety
boiling water
salt to taste

Method

Sauté the onion in a pan with the oil until soft and translucent.  Add the rice and salt and stir well.  Then add two mugfuls of boiling water.  Reduce the heat and simmer for 15 to 20 minutes with the lid on, and no peeking!

Remove the lid and check if the rice is cooked and also that it is the right moisture level.  If so, turn off the heat.  Replace the lid to keep the rice warm before serving.  Delicious!

Note: This rice dish can be used as a vegetable accompaniment or served with casseroles or goulashes; it will lap up the juices nicely.

The cooked rice will also store well in the refrigerator for a few days if not all used on the day of cooking.

aving problems with making custard at Christmas i turned to delia and did her white sauce for puddings , so easy and wonderful flavour , i made half with rum and half with brandy to see what was the best , now hubby prefers it to custard .hip hip for delia .

I used to like Delia until she started the "Lets go buy packet food and cook it quickly" theme.  Felt she has just tried to be different and do something that will earn her some more fans.

I'm all for quick meals but won't be joining the Aunty Bessie/convenience food range fan club !

I didn't know Delia had done that!  It seems like it might have been a money-spinner option for her.  I will never go down that path.  Life's too short to eat drab, stodgy grub!
