L-m-p, I just hang them as is in a dry area and let them get papery skins. At that time it's safe to cut off any excess stalk and roots; they'll keep quite well this way. Some cut the roots off right away but I haven't found it makes a difference, just double work and mess.

I've had them laid out on a rack since pulling them up today, so will go hang them in the shed .
