I've never had a problem peeling the shells off boiled eggs before. But since we've got our hens, it seems that they don't peel properly (i.e easily) and the under layer of egg white comes away with the shell. Is this simply because they are fresh?

The second question is.....eating one egg a day is okay for an adult, but does anyone know what is okay for a 2 year old??

yes its cos they just popped out the chooks bum.

cant help with how many for a 2 yr old, but im sure someone will be alone soon who can help.

Definitely peeling egg problem is cos the eggs are sooo fresh.

I have 5 children and 9 grandchildren....  I would not give a 2 year old child more than 3 - 4 eggs a week...

I am not saying that I am right...  This is just my opinion!

It's amazing how many people have never come across a fresh egg before  :lol:

You can't buy them in a shop !

When I want to peel an egg I crack it round the long circumference with a knife and slice it in half - shell and all - you can then scoop the egg halves cleanly out of the shell with a teaspoon. Easy  8)

Opinions keep changing on how many is good/bad for you. Once it was considered excellent weaning food, then along came cholesterol, no idea now though.
I demand the right to buy seed of varieties that are not "distinct, uniform and stable".

I find that as well as fresh eggs being difficult to shell some breeds of chickens make it more difficult for me. I have a wheaten maran that lays eggs impossible to peel and a brown leghorn that lays eggs I can peel on day one.

Has anyone else noticed that fresh egg yolks would double as super glue! I have to soak plates and cutlery in cold water or they never come clean, never had that trouble with yukky supermarket eggs.

Hi, i hard boiled 9 eggs last night, and i have had this problem with our fresh eggs for years, last night i found that if I hit the shell all over with the back of a spoon, so that the shell is broken into tiny pieces, 9 out of 10 shells came off very easily (eggs were still warm) , not sure if it will work so easily next time, but worth a try.  Like everyone else in the past i ended up with more bits of egg coming off with the shell than shell alone :D  :D

Eggs do contain a type of cholesterol found in many foods, called dietary cholesterol. Eggs, liver, kidneys and prawns are higher in dietary cholesterol than other foods.

But the cholesterol we get from our food has much less effect on the level of cholesterol in our blood than the amount of saturated fat we eat.

If you are eating a balanced diet, you don't need to cut down on eggs (or kidneys and prawns), unless your GP or dietitian has advised you to do this.

Eggs are a good source of protein, iodine and vitamins such as D and B2. Poached or boiled eggs are a healthier choice than fried eggs, because you don't need to add fat during cooking. To make healthier scrambled egg, you could use skimmed or semi-skimmed milk rather than whole milk, and if you normally add butter, use a little low-fat spread instead or some vegetable oil such as sunflower oil.

I have my cholesterol checked every 6 months a part of my check up.

It's always been around the good mark. I asked my GP if eating a lot more since we became self-sufficient is a bad thing. He reckoned if you ate a dozen a day and very little else it would be a prob but otherwise no.

I'll see if my recent test shows any rise. I will report back !

I've always found that if you place the egg in boiling water rather than cold water and bring to the boil then run it under cold water until quite cold before trying to peel this helps. Mind you I've not had total fresh eggs before!

If you want boiled eggs that shell easily don't keep them in the fridge.
It is the only thing that works for me.
