Last year I had a fantastic crop of parsnips, which I was over the moon about as it was the first time of growing. As a result I had a load all ready at the same time and tried a Spicy Parsnip Soup (amazing by the way)

Does anyone have any more parsnip recipes for me to try as I do love them? :D  I`m open to any ideas...

The easiest and nicest I find is

Roasting Dish
Olive Oil
Honey
Heat @ 200c for 10 mins
Slice parsnips (Lengthwise) I quarter them
Cook in Oil/Honey mix for 20/25 minutes

Honey roasted Parsnips are bloomin' gourgeous

Not really a recipe but I like em

Alright alright , you dont have to rub it in about how successful youve been with growing loads. Some of us struggle to grow one.  :tongue2:

I`m sorry to hear that you struggled to grow my favorite vegetable, are they generally difficult to grow? I only started my raised bed at home last year and threw some seeds in the ground and off they went! call it beginners luck.

I have put more seeds in the allotment this year so if I succeed again I would happily share the crop :wink:

OK, not 100% parsnip, but the ratios are variable to suit your glut - enjoy!

To feed 4 people, take a random selection of the following:-

Potato, Sweet Potato, Parsnip, Swede, Carrot. You will need about 2lb of prepared roots.

Chop the veg into chunks and place in a saucepan, just cover with water and boil till soft. Flavour with a couple of cloves of minced garlic and loads of black pepper. Taste, and if more flavour needed use vegetable stock cube/powder/dash of worcestershire sauce, or whatever takes your fancy.

Either use a potato ricer, or a blender to blitz the soup to the consistency you like. If it's too thick water down with vegetable stock.

Serve and enjoy.

A really filling soup that just lovely when the weather outside is miserable.

Freezes well too.

Par cook parsnips, coat with finely grated parmesan and fry until crispy, orgasmic.  8)
Cheese makes everything better.

Use a mandolin or fine slicer and deep fry for parsnip crisps.  Coat with sea salt.  Saves a fortune on the shop bought variety.

The roast parsnip & honey recipe is good

An alternative is to coat the par boiled nips in grated parmesan cheese

I prefer mine overcooked so they get really sticky and a bit burnt

An alternative to just honey roasted parsnips is to add mustard to the honey, whole grain mustard is best.

Par boil, split in half and coat with cheddar cheese and chilli flakes then grill until golden brown and crisp.
