I would still just leave them 'till the stems fall over even as they are May ones.

The ones that have bolted just snap the flower stem off and use these first as they won't keep well.

Bolting tends to occur with a long dry spell or any other stress they get.

I'd give them plenty of water now as this will get you a bigger bulb. :D
