I have searched, but not found this on the forum, apologies if I missed it.

I read discussions from people who dont like the above veg. This for me is the best way to cook them and enjoy tapas style cooking with easily grown British veg, on or off the bbq.

Slice courgette/aubergine, about 1cm/1/2 inch across, I like a diagonal cut for a larger chunk.

Mix Balsamic vinegar, olive oil and garlic in a bowl. Quantities to suit, oil and balsamic usually 2:1ish.

Brush vegetable slices both sides with oil mix. Grill or bbq until browning and then turn. Can also be nicely done on a griddle. You can squeeze some lemon over them before eating if you like.

Quick, easy and delicious.

I love courgettes.
We discovered courgette fritters this summer.
Get a few  and grate them
add to a batter ( flour egg milk) and stir around. We've also added feta or various other cheeses too.
 Drop a small ladle worth of mixture into a frying pan and fry for a few minutes either side. Very delicious

I love courgettes and I did fritters this year. Love em grilled as Paddy says. Yum. Can't wait for my first courg of the year

Do you think the cooked fritters could be frozen?  Just thinking about how I can store my excess of courgettes (I live in hope    )
