G'day, Unlike Cynara we have lots of beetroot and we are sick of beetroot chutney, a friend informs me that his mother made beetroot marmalade but the recipe is long lost. Is there such a marmalade and if so would anyone be willing to share the recipe .Cheers Esmond.

roasted beetroot is yummy just roast it like you would all other types of med veg.  Cut into segments and dribble olive oil over and roast about 40 mins.  yum.

Home made pickled beetroot is nice, as is Borscht (Beetroot soup with sour cream, served hot or cold)

roast beetroot is heaven. Can't wait for my first crop  :D  Where I live the locals have a particular liking for beetroot and my local group decided to produce enough to sell. We've had two sales of it so far and it flies off the stall  :D

when u roast do u peel it as well or just head and tail it?

unpeeled!  You can top and tail first though I suppose.  They get peeled after cooking.  I'm salivating now  :D   So flipping easy to grow yet so delicious.  I looked at cooked beets in the shop yesterday and they were smaller than tennis balls - bit bigger than golf balls - 80p for two. So well worth growing your own.  All the seed seems to germinate too so a winner all round

bolt-resistant seed can be sown from March to July (but cloche if March) I've not done mine yet cos it's too Baltic out there  :D
Other varieties from April

it will tell you on the packet. Always have a good read at the back of the packs cos you'll get chapter and verse there  :D

I did that pink and white stripey one last year as I like the look of them but they're deffo not the best eaters - texture more like radish than beetroot but they did slice up fine for salad. Trying the golden variety, amongst others, this year as the flavour is supposed to be top  :D

Beetroot is healthy, delicious, so sow enough  :D

we eat the skins as well once they are roasted realy good flavour .

Use beetroot grated into cakes and puddings like chocolate cake and summer pudding (you don't see the colour so much in these types). Makes the cake/pudding succulent and moist. You can add roughly a quarter of the weight of flour that is specified in the recipe.

beetroot risotto is one of my faves.

i had a meal out recently that was portabello mushrooms and goats cheese grilled with a beetroot puree - now i know it won't help you if you've got lots to use but that combination of flavours is fab.

i replicated somehing similar stuffing a huge flat mushroom with goats cheese and encasing it in a mound of grated beetroot then dotted some creamed horseradish on top - divine!

Roast beetroot with Balsamic vinegar

Try this
6 beetroot, medium, par boiled, in skins
3 cloves of garlic
Handful of fresh majoram
Good drizzle of olive oil
Good drizzle of balsamic vinegar

Wrap in foil and put in oven for 45 mins

Good with fresh bread, good with loads of things actually
