They looks like a beet of some sort - beetroot, chard, spinach. If you have some seeds left check them out. Brussel sprout seeds are brown / black, smoothed skinned and about 1mm diameter. Beet seeds are about 5mm diameter, light brown (ish) and have a rough narley skin.

Could be a beet but I don’t think it’s beetroot.
All beetroot I have grown germinate to 3 shoots.
