Lifting and storing beetroot?

I’ve got a row of beetroot that are a decent size and wondered if it’s ok to lift and store them now rather than wait until autumn. Last year the mice had a field day on them :(

Any tips on storage methods?

I roast them in chunks and then freeze them.

They make a nice side dish once reheated in the oven and the texture and taste are almost identical to freshly roasted beets.
