We are having a slow food day here. I had a couple of slices of belly pork left over from a recipe. The rest is in the freezer already cubed and marinated ready to go into a curry I want to try. These extra slices were also cubed and marinated overnight, but in garlic, chilli and herbs.
The pork, a couple of tins of chilli beans, some casserole veg starter base I made in bulk and froze tubs of, home dried tomatoes and mushrooms, a tin of tomatoes, more chilli, garlic, herbs and tomato purée are in the slow cooker blipping away. I’ve also made sourdough this morning with chilli and herbs and that is rising slowly but surely. I had leftover cabbage and carrots, so those are shredded in a bowl in the fridge with some chervil from the greenhouse and some home dried mint and will be made into a salad later.
The beans and bread will be more than enough to spit and freeze a fair bit for 1 or 2 more meals. I feel the warm glow of frugality, not wasting anything and the promise of a good meal later for not a lot of effort on my part
