During my clear out of the little freezer found some scallops which have been there for some while so adapting a starter recipe I have to use them up.  Sauted potatoes and courgette to go with.

Sweet & sour chicken (from a well known jar) with added stir fried veg, rice & a packet of prawn crackers.

Beef Bourguignon    and by special request dumplings and roast potatoes.  Found some tinned carrots at the back of the cupboard so will use them up.

Spinach and egg curry and rice. 

I felt the need for a pud so we had plot tayberries set in jelly with ice-cream and squirty cream  :D  It was a nice reminder of summer on a dreary wintery day.

Changed my mind about that veggie mince using it on it's own there's a nasty chemical after taste and the texture doesn't hold up after prolonged cooking.  Shame as it was useful to keep in the freezer.

Went with rice yesterday so it's pasta tonight with whatever I can find to make a tomato sauce from.

In view of the weather conditions here I’ve just put a chicken hot pot in the oven & himself has baked himself a baguette & I’ll have a couple of Yorkshire puds leftover from last night reheated. I’ve also slow cooked & glazed a gammon hock whilst the oven is on, so will think of something to do with that for tomorrow night. Busy making chicken carcass stock & that might end up with the last of the leeks & some potatoes in soup for lunch tomorrow, can anybody guess I’m cold  :lol:
