A snip too far

One of my uchiki squash is galloping away and had 6 squash maturing well.  So thought I'd cut back some of unproductive shoots to give space for some chard.  We'll, snipped in the wrong place and cut off two  squash.
Never grown them before but gather they usually left until first frost approaches.  Have to chop into these two and see what they're like;  I'm guessing courgette or marrow?

Have they turned red, or still pale?
If the latter, I don't think you'll like the taste, the one I tried was quite bitter 

Yes, I picked off a number of undeveloped squash one year and the butternuts were quite nice with a creamy flesh, but the Ulrichi were very bitter and inedible.
