Here goes:-

                  4lb marrow(s)
                   6 onions
                   2lb brown sugar
                   grated rind & juice of 2 lemons
                   2tbsp ground coriander
                   1tsp ground cumin
                   1tsp cayenne pepper
                   2tsp salt
                   1 3/4pt white wine vinegar

1/ Peel the marrow(s), cut into quarters, chuck out the pith and pips and cut into 1 x 1/4" pieces.

2/Finely slice the onions.

3/ Sling everything including the marrow & onion into a preserving pan and bring to the boil. Simmer for about 3 hours, not forgetting to stir every so often. The liquid should have thickened somewhat and the marrow should be soft (it won't be as thick as other chutneys).

4/Pour into warm, sterilized jars whilst hot and seal.

5/Should make about 5x1lb jars.


                   Tastes just like mango chutney............................Honest!!

I make a marrow chutney and I defy anybody to taste the difference between it and mango chutney. I'll post the recipe if anyone is interested.
