Could anyone give me some advice on pruning pears please?

I have 2 espalier pears against a trellis, already there when I got the plot. I got 1 pear off them last year   .

I believe now is the time to prune them but I have no idea what to do.

I did buy Hessayons book on fruit but I'm having major renovations done at the moment and all my books are packed away (I know, I should of left it out, but when you've got water coming in your ceiling you don't think  ).

Any advice appreciated.
