How do I know when these are ripe? Any recipes for cooking them, please?

Generally, winter squash are ready when the stalk has changed colour from green and looks as though it's hardening off.

I'm not familiar with honeyboat squash but there are lots of squash recipes on the main site; put squash into the search box:
