my eggs spit is there water in them? I fry them and sometimes they almost explode, the yoke actually broke and it was so violent the egg turns upside down, it's strange

Eggs are mostly water, it is steam trapped underneath that flips them.
A gentler heat should do the trick.
I am not a liker of crispy edges so use a cold non stick pan with very little oil on the smallest burner.

Really fresh eggs have more water than supermarket eggs that have been drying out for days in transit .

If you like boiled eggs best buy an egg pricker to puncture the air sac at the round end or your ultrafresh eggs will pop when you drop them in boiling water !
