Red cabbage - cumin and coriander spicing

As requested  ;)

It was a recipe I found on line, but I can't remember where.  The original used lemon, but I think orange works better  :)

1.5kg sliced red cabbage
2 chopped onions
Zest and juice of 1 orange
1 teaspoon  each ground cumin and coriander
100g soft light brown sugar
3 tablespoons cider vinegar
Seasoning
A bottle of dry cider - the more traditional non fizzy dry cider works best - you need about 300ml

Mix everything together, except the cider and put into a large ovenproof dish with a lid.  Cover with cider so the liquid just comes up the level of the cabbage.  Cover and bake for an hour and a half at 180 degrees C.  You can also cook it on the hob, in which case, don't drink any leftover cider, as you may need it to top up.  If you use the slow cooker, be meaner with the cider as the cabbage cooks in the steam and the liquid doesn't evaporate, so you end up with pretty much what you started with.

Freezes really well.  To use, defrost, put in a covered dish and warm up in the oven, or microwave it.
