Pumpkin Pie

I made two of them for a street party at the weekend. I didn't say what they were, just put them on the table and they disappeared very quickly    Some of the filling was spare so I just baked that separately as "pumpkin custard", and have been eating it all week with fruit, as a dessert.  Flippin lush! 

The pastry for the pies was sweet shortcrust made in the food processor with frozen butter and iced water. Turned out really flaky and crisp.  I could get seriously addicted 

I just wish I had a mouli !  I had to use a sieve and my arm nearly fell off      I shall deffo make more.  I used my Small Sugar and a New England Pie

CQ you've broken the cardinal rule - surely there should be a recipe/link with that post...
