Hortopita recipe

As requested  ;)
Pastry
2 cups of plain flour
1/4 cup olive oil
1/4 cup tepid water
1 egg
1/4 tsp salt

Blend everything together in a food processor until they form a ball, chill in fridge.
Divide into 2 one piece slightly larger.
Oil an 11" round pie dish and line dish with larger piece of pastry, leave some to hang over edges.
Filling
200 grams mixed greens washed and thinly sliced (cavolo nero, kale, spinach, chicory etc )
2 spring onions, thinly sliced
2 tbsp chopped dill
2 tbsp chopped parsley
75 grams feta cheese, crumbled
25 grams grated Kefalogaviera or Parmesan or Pecorino
1 egg lightly beaten
salt and pepper for seasoning - it needs generous seasoning IMO

Mix eggs and cheeses together in a large bowl and then add all the well-drained greens. Pack it all into and onto :D the pie bottom. Press it all down to fit.
Roll out top and put over filling, fold over top and pinch together with bottom to seal well.
Brush top with olive oil and bake at 180C/gas 4 for about 45 mins - until top is well browned.
It's usually served cool, rather than hot.

Hmm that looks good, I will try that when veggie sister comes to stay. Does the cavelo Nero cook in the time it takes to bake?

It did when I followed the recipe exactly, IIRC.
The point is to use whatever greens you fancy/have to hand from the plot  :)

I would like to query the number of eggs in the filling. The recipe states 1 eggs and the instructions refer to eggs (plural) too. Is it just the one?

To clarify - 2 eggs, 1 for pastry 1 for filling  :)

Bear in mind this was translated from Greek (as best I could, with generous use of my dictionary  ::)) to post here.....  :nowink:

I'd say less crisp than the top, but not excessively soggy - using a metal pie plate helps.
