im lifting my potato crop now...do i just put them in a bag an store in the shed

You'll need to leave them on top of the soil to dry out thoroughly for a day or two and for the skins to harden.
Did it really tell you to do THAT on the packet?

An hour or so is enough for my potatoes.  The soil is dry as dust.

Then bag them and store them when you are happy that the skins are dry.  I use hessian sacks as they are well ventilated.
