If you can get over your discomfort about gelatine the leaf stuff is so easy to use. So much easier than the granular stuff.

Why not give the leaf gelatine a go and let others try it, and you may be inclined to try it too when you see how good it is.

I have lots of lovely recipes for cheesecakes with gelatine.

You are quite right, chocolate mousse will use the chocolate to set.
