elephant garlic getting seed heads - what to do?

Autumn planted garlic and small shallots which have looked fantastic all winter are suddenly growing flower heads. 
The shallots are in modules of 2 or 3 and have begun to die back but now have seed heads - presumably they are ready to lift, but the garlic - mainly elephant garlic, has very green leaves but many are producing seed heads and thick stalks, do I just cut off the seed head and wait for them to die back before lifting , or do I need to lift them now?

I have grown a fair bit of garlic but not elephant. I think you can choose.  definitely remove the seed heads but I believe you could use some of the shoots/leaves known as "scapes" in cooking straight away. ( There are recipes in today's independent magazine) perhaps use some now and let others die back. It's still early in my book to harvest garlic for drying ( July ??)

Cut out the scape, but it is not time to lift elephant garlic yet, so given them a feed and plenty of water to build up those huge cloves.

Shallots shouldn't bolt, whether grown from seed or sets, although they can do if conditions are against them.

Cut the seed heads off, but don't plan on trying to store them - they won't keep well.
Sow your seeds, plant your plants. What's the difference? A couple of weeks or more when answering possible queries!

Hey now, that's very interesting, Sunny!

Can I do that with ordinary garlic as well? The scapes are getting taken off each day, and the corms are a pretty good size, so should I still feed 'em?

It wouldn't be a problem!

Just noticed my Wilko bought garlic are also going to seed and I don't know why, they have been well looked after, so remove seed heads and what feed do I use, I have comfrey and nettle, cheers Dave

They are 'scapes' as previously mentioned in this thread, and are perfectly normal for hardneck garlic (strictly speaking they aren't seed heads, and it doesn't indicate a cultural problem as it would with onions or shallots.)

The bulbs should be starting to swell now, so a liquid feed wouldn't go amiss - comfrey or nettle may be a bit high in nitrogen at this stage of their growth, but less so than many bought liquid feeds, so should be fine as long as you don't overdo it.
