Oat biscuits For Sparkyrog

As promised Sparky, recipes for 2 sorts of oat biscuits to go with cheese.

These biscuits can be open frozen raw and then cooked from frozen or even better, cook them when you have time and freeze them when baked. Then take them out as you need them.
NB, When re-rolling the trimmings to make more biscuits you may need to add a few drops of water to get the dough to hold together.

Oat and black pepper biscuits
75g oatmeal
175g wholemeal flour
2 tsp baking powder
1 1/2 tsp mustard powder
1 tab coarsely ground black pepper
pinch cayenne pepper
1 tsp sea salt flakes
100g unsalted butter
2 tabs caster sugar
2 tsp finely chopped rosemary
3 tabs whole milk
Plain flour for rolling out.

*Put the first 6 ingredients in a food processor and blitz to mix.
*Then add the next 4 ingredients and blitz until the butter has been incorporated.
*Add the milk and pulse until the dough comes together.
*Tip the dough onto the work surface and knead lightly to a smooth ball.
* Roll out to about 2mm and cut into 6-7cm rounds with a cutter.
*On to baking sheets. I line mine with baking parchment or that brown silicone paper.
*Chill for 20 mins then bake 180C or 170C Fan for about 15mins.
Cool on racks and eat or freeze.

Walnut and Black Pepper oat cakes
50g walnuts
125 medium oatmeal, ( I used rolled oats and blitzed it in the food processor)
125g plain flour
1 tsp coarsely ground black pepper
1/2 tsp bicarbonate of soda
1/2 tsp sea salt flakes
75g butter
1 tab clear honey
* Blitz walnuts in a processor until coarsely chopped, or chop by hand.
* put walnuts and all dry ingredients in a bowl and  mix to combine.
* melt butter in a pan until bubbling, add this to the dry ingredients with the honey and 2 tabs of water.
* mix until you have a soft dough that is not too sticky.
* Dust work surface with a little flour and roll out the dough until it is the thickness of a pound coin.
* Cut out into rounds about 6-7cm.
* Cook on parchment lined baking sheets 10-12 mins at 190C or 180C fan.

I like to make batches of these and freeze so I have some ready if we have unexpected guests for dinner.

I also like to make some walnut granary bread and rosemary and raisin bread to go with the cheeseboard. The former goes well with strong hard cheese and the latter goes well with a good ripe brie.
Some quince cheese and pickled peaches and pears makes the cheeseboard. :D

Oooo, I am blushing. :blush: :blush:

Hope you enjoy them, I have a family of cheese lovers and often send for an English cheeseboard from the West Country.

I used to do a variety of breads to  ;)go with them but my son recently told me he preferred biscuits with his cheese so I went in search of a really good biscuit and these fitted the bill. ;)
