No need to panic about digging them up. You can leave them until the tops really get going, usually about April. If you want to have a spectacular show leave a couple to grow up and flower.

Bees and hover flies love them, and they make an interesting addition to flowers indoors too :D  If they are an F1 variety though it is not worth collecting the seed as the roots from these may well be very woody and tough (She says from experience) but for goodness sake cut them off before seeds go everywhere as they germinate like mad all over the place  :lol: :lol:

Considering how difficult we all seem to find it to get them to germinate when we sow them, that doesn't seem very fair!

That was me last year, but this year they have all come up.  Mind you they are all awful to peel, they are such funny shapes

Not only that, they  even came up like mustard and cress the following year too, and those in the bark paths we ended up using as teeny tiny ones with their leaves still attached,  in salad  :lol:

I only grew a few parsnips this year as last year's efforts weren't too brilliant. Dug mine up just before Christmas and wasn't hopeful, foliage was quite sparse but was just slightly shocked to find these beauties lol...

Can't help thinking the self seeding parsnips confirms what we already know - really fresh seed, and sowing once the ground has warmed up.
