as you say...each to their own...... :lol: ....

but when i did my very first food hygene course this was one of the things they teach you....never keep eggs in a fridge......cant see things have changed that much in 15 years or so....lol...

Just to add my two penny worth - I've checked my Katie Thear and she says:

"Eggs are best stored in a fridge or cool pantry...any that have been soiled should be wiped clean and fridge temperature will stop any pathogens developing. It is not a good idea to store eggs in one of those rustic-type egg holders that one sees in 'rural lifestyle' kitchens"   :lol:

 This is the advice I follow anyway  :D .

Come to think of it - we used to keep chickens at home and my mum always had one of those china hens to keep the eggs in!

They need to be enclosed in something - egg box, china chicken etc. - to minimise evaporation through the shell.  

The atmosphere is very dry in a fridge so evaporation would be fast.
