I've tried roat butternut with a roast dinner and didn't like it  :(

Do you need to add spices when roasting?

I only like butternut but have decided everything else is just a waste of growing space. Butternut and beetroot in a soup fabulous

I do a Hugh fearnley wittingstall one,
Halve a butternut lengthwise,scrape out seeds, put a crushed clove of garlic in the hollowed out bit with a knob of butter or some olive oil,season with lots of black pepper & sea salt,place in a hot oven & roast till done. Cool & then scoop out most of the flesh, leaving a shell. Mash flesh with more seasoning & some fresh thyme & crumble in walnuts & blue stilton(I use white Stilton with apricots,cos I don't like blue cheese). Pile back into shells & drizzle with a scant drizzle of honey  & a few saved walnuts & cubes of cheese. Put back in the oven & bake until hot. Can be made in advance until the second baking.

That sounds quite a complex recipe, Snowy :wub:  Would be good for entertaining visitors though.  I'd have to leave out the garlic though - I don't like it and it makes Worzel blow up and explode  :lol:

No really easy, great because you can prepare in advance. Good if you have a veggie guest or another variation I think was pine nuts & crispy bacon.

Can you freeze it after the first cooking?  I like to do largish batches of things to save me work later on.

works well with rosemary too. And it's v forgiving so doesn't have to be in a stupendously hot oven - I can get a loaf of bread doing with it too. Given the oven is on and all.... :)

So glad you started this thread Aunty. 

I love growing (and looking at) squash, but they're a bit too sweet for me tbh. 

I've only just composted the last of last year's crop (because it would've taken a chainsaw to break in to them). 

So, being the soup dragon that I am (it's genetic), I was motivated to peel and chop my Uchiki Kuri and make a lovely squash, coconut and chilli soup.  :tongue2:

I gave a squash to a friend last week just to get rid of it, and she gave me some lovely soup she made with it today. She roasted it with garlic, onion, and sage, liquidised it, and added chicken stock, salt and pepper.

I like to oven roast them , cut up into wedges, sprinkled with lots of salt, chilli and oil. Just before they're done I sometimes add a sprinkle of brown sugar and lemon juice. Bake till skin is caramelising.
