Help with ice cream

Have put some double cream. cocoa and sugar dissolved in water and honey in my ice cream machine and it doesn't seem to want to set the bowl was in all night. i 've stuck the whole lot back in the freezer what do I do now?

Did the bowl feel really cold?

If it was then it may be the recipe. If you put too much sweetener in the icecream mix it can inhibit the freezing process.

Did you start with a recipe or was it one you made up?

If the mixture in the freezer freezes OK then take the mixture out and beat it like crazy with a sturdy electric mixer or in a food processor to break down the ice crystals and then refreeze the mixture in a plastic container.

If the mixture does not freeze after you have left it in the freezer for a while it may have too much sugar and it is unlikely that it will freeze. So I would have another go and make some vanilla ice cream and warm the first mixture in a saucepan to make a sauce to go with the new icecream.

Thanks Mrs Bee its seams to be freezing around the edges Shall I leave it in all night and beat it in the morning.

Can't make anymore just using up the cream I was given. I made up the receipe with what i had.

I would leave it in all night to make sure it will freeze. Then in the morning if t is frozen rock solid let it defrost slightly and then beat it and freeze it. You should do this process a couple of time and before eating it allow it to soften at room temperature for a while. ;)

If it does not freeze you could still warm it through and use it as a sauce for warm cake.

Was it a recipe you were following or a made up one?

I made it up I had 2 tablespoons of cocoa left added 2 a little honey and some sugar added some water and simmered it till it dissolved let it cool and added to pint of double cream.

Well that sounds as if it should have worked.

Did the bowl feel really, really icy cold? Maybe the bowl is defective.

Yes the bowl was really frozen i'll leave it in over night and beat it well tomorrow. I may have put in too much mixture for it

And yes too much mixture would make it difficult to freeze.

I just did that left it over night it had only had one mix and it was a brick in the morning as I made at 9 in the evening , I had to let it melt enough to be able to beat it .
