The micro pud trials
« on: April 06, 2014, 19:26 »
I was amazed to find a micro sponge pud that is wait for it suitable for Florence BUT it doesnt work completely and I need some help.

The recipe is as follows
110g SR flour
50g sugar
1 level tsp baking powder
100ml water
60ml veg oil
1 tbsp golden syrup or jam

The recipe actually tastes ok seen as its allergy free.
The instructions
In a pyrex bowl, put the flour, sugar, baking powder
Stir in the water and oil, mix completely until a smooth mix is achieved
Pour syrup into the middle of the mix, it will sink to the bottom.
Cover with clingfilm and microwave on high for four mins.
Leave to stand for a few mins and turn out on a dish

PROBLEMS.

The mix stuck to the bowl on batch one.
The jam didnt sink.

Batch two we mixed in a seperate bowl and greased the one we cooked in. We also put a layer of jam on the base of the bowl.

PROBLEMS

The jam worked well on the bottom but the sponge mix still stuck.

Help anyone please. The mix is edible which is something to hold onto in this allergy land. I really want to aort this. Would it be better baked. I cant do another batch tonight as we have munched two already and I feel sick

:) are you cooking in a plastic pud bowl (ie ex-chrimbo pud) or china?
Plastic pud bowls always stick for me.  I use china.  I think the greased, jam on bottom approach would be best (this is how I do mine)   Jamie does his prune puds (prunes on bottom, ginger in the mix) in tea cups- you could try that, child friendly portion  :D

The cake recipe I gave you works as a steam pud, done in the normal way, grease pud bowl, pot, put jam/syrup, add cake mix, micro. Leave to stand for a couple of mins. Top of pud will be a little sticky when you take it out of micro

Ooohhhh now this could be interesting. I used glass but it stuck everywhere but the jam bit. Maybe i will jam the whole bowl

Will also have a go with snowdrops, we have those cakes all the time.

It could be the shape of your bowl as well. I have 2 Pyrex dishes I use in the microwave - one is wider and shallower and one has a narrower base with steeper sides and is taller. If I do micro puds they stick to the shallower one but not the deeper one.... I don't know why but my sister has found the same. Also make sure you mix the mixture in the same bowl as the stirring and putting it on/ mixing it off again seems to help for some reason (maybe the oil in the mixture?)

This is what I use

http://www.amazon.co.uk/Pyrex-98000-1L-Mixing-Bowl/dp/B003U6GBSG - this serves 2 people

You can get even smaller mini bowls as well

I feel like Lardman doing his cake trials. Not sure I can eat another today.  maybe later. Seems a shame not to eat the trial versions but my hips are groaning

I would suggest silicon too, or try a squareish bowl and line with baking parchment.
