As someone pointed it out earlier, the tubers form under the surface. Hence they are earthed up, to increase the forming crop. The other way around it does not work. It just takes longer for the deeper planted seed to surface/delayed cropping. Or comes up sideways, if there is an angle to the mound.

1. My understanding is that we hoe up potatoes to stop them going green. Green potatoes are poisonous.
2. Potato grow bags are a lot deeper than any trench, and very often more crowded.

True, I've never used them. The question is, how much crop you get in them. You shall see.
