Gavin’s Chicken Liver Patè
« on: February 12, 2014, 18:22 »
Last night I found my recipe for home made liver patè that my wife kept from 20 years ago... Woo hoo - its good. Just made 3 tubs of it.. (I double up the amounts..)

Gavin’s Chicken Liver Patè

1/2 kg Chicken livers – cut into strips to cook quicker
2 chopped onions - medium
1/2 cup chopped rindless bacon
4 cloves chopped garlic
1 chunk margarine
Sprinkle of thyme
Sprinkle of sweet basil
Sprinkle of salt and pepper
5 big swigs Sherry for you and 2 more for the recipe!!

Slowly fry onions, liver, bacon, garlic and spices in some margarine. Cover and simmer a bit then finish with lid off. (remember to take a few swigs of sherry whilst you stir..)
When cooked add some sherry and remove from stove.
Cool for a few minutes while you refill your sherry glass - again.
Place all in a blender and blitz till nice and smooth.
Spoon into shallow dishes and pour over a layer of melted margarine to seal.
Place in fridge to cool.
Now a member of the 10 Ton club.... 2013  harvested 588 Kg from 165 sq mt..

You know, I'm not a liver fan at all but that does sound rather delish ...

How long would it keep in the fridge for?
I try to take one day at a time, but sometimes several days all attack me at once...

I used to do liver pate but used butter rather than marge. If you're going to splash out, then you might as well use the good stuff   :D

Just made some lambs liver and bacon pate. An overnight chill in the fridge should make it perfect for breakfast on toast. My other favourite for breakfast, other than the above and chicken liver, is smoked mackerel pate. So simple. Takes no longer than ten minutes to make and tastes divine.
