this morning's outcomes!

Having not been able to wield a knife or peeler for a long, time, I am enjoying being able to make some Christmas goodies for friends and family. This morning's outcomes are almond and raising biscotti, and spicy honey nuts.

These will be in the gift baskets once the other contents have been collected from the garage and nicely assembled!

They look lovely,can you share the recipe for the nuts please? DD made a large batch of biscotti on Tues,choc & hazlenut & pistachio & cranberry I think they were

Recipe for Spicy Honey Nuts:

Oven on Gas 1 or 110C. You need a flat oven tray and a silicon sheet as the nuts don't stick then

450gm mixed nuts including skinned almonds& brazils, walnuts, pecan and hazelnuts and unsalted peanuts
2 tbs sunflower oil
3 tsp spice mix - mine had quite a lot of chilli powder in it (about a level tsp) cinnamon, nutmeg, cloves and green cardamom all ground together
2 tbs runny honey

1. Mix up the oil and spices in a largish bowl, add the nuts and half the honey and mix well
2. Put on the prepared tray and in the oven for 10mins
3. Shuffle up the nuts a bit with a spoon and add the rest of the honey. Give it another stir around
4. Roast for another 10 mins
5. Take out and let nuts cool completely
6. Break up any that are stuck together and store in a sealed plastic box or screw top jar. (I am putting mine then in cellophane bags)

They keep  a couple of weeks, if they don't get eaten first

PS you can use a largish tbs of spice paste in oil like Pataks if you want a very spicy taste, but with no extra oil

 I am sure that the recipients will love them.
I made cardamom, chocolate chip and hazelnut in my biscotti and roasted and smoked my nuts before coating them in sugar, salt and chilli for my hampers.

And bags of homemade fudge.  Chocolate and hazelnut, coffee and walnut, salted vanilla, ginger and rum and raisin.

Thanks Sunny,after I posted that request i got out some of my recipes & found a very similar recipe,how weird is that? Perhaps I should add it to Growster's consequences thread  :lol:

Here's the one I found, from The Woman's Weekly. Not tried it.

Spicy sugared nuts
1 medium egg
2 level tsps caster sugar
1lb assorted nuts
1/2 level tsp gr cinnamon
pinch of grated nutmeg
pinch of salt
baking sheet lined with parchment.

Set oven to 1/4 or 110c
Add 1 tsp water to the egg white & whisk until frothy,add sugar,nuts, salt & spices & mix well.
Spread out onto baking trays & cook for about an hour stirring every 15 minutes.
Remove from the oven & leave to cool before storing in an airtight container. Will keep for up to 3 weeks

Sounds a bit more complicated than yours Sunny & of course sweet not savoury.

I had to fight Mr Sunny off when he came home from work or there would be no nuts left  :lol:

Fudge today -- rum and raisin - and the raisins have been soaking all night. I'll post a photo after it has set and been cut, which might be a while  :unsure:
