when to remove raspberry canes?

hi all.

i know i need to remove the raspberry canes that have fruited this year to allow for fresh growth.

what i would like to know is when to remove them?

i don't know what variety they are. this was there first season and they seem to be fruiting from spring until now (still got fruit on them now, but not ripening and get caught by the frost).

they still healthy looking leaves. i'm not sure weather it would be best to leave them till the leaves start dying off (so they get as much goodness from the sun) or weather to cut them out to encourage new growth?
