I compost loads of stuff this way, as I never have enough compost bins. There was another thread recently about it.  You will be amazed how quickly everything rots down. I find no trace of what went into mine the following spring.
Something about this method makes more sense to me than composting in a bin. So, as soon as beds start to empty I start chucking stuff in.   :)

our bean trench currently has the stalks of the vines, sweetcorn, clematis and borlotti beans in it, as they are all a bit stringy in the compost, but do a great job of decaying in the trench.  Plus the calabrase stalks and will get the brussels stalks as they are eaten (the brussels not the stalks!).

The foxes have taken a liking to the 'buffet' on offer in the bean trench. Tea bags and peelings scattered about the other beds.

I get the same problems but mostly with the birds in winter, hence the covered bins in winter. I'm fed up picking up veg and fruit bits all over my snowy yards. In warm months it isn't a problem since critters find enough food elsewhere.
