what do i do with squash

I have four large squash on the plant outside but all are very green.
I took one off and put in the greenhouse.  Still green.   They are butternut.  Can anyone recommend what to do.  Getting concerned the weather is getting colder.  It seems such a shame because they look healthy.   Does anyone know can they be eaten green or will they be awful.   Thanks

I found a greenish one on my plot yesterday so left it be. Mind you Carol K mentioned the F word on the forecast today  :ohmy: so maybe I shall go and pick it asap

You can ripen it at home, either in the greenhouse or in the conservatory, kitchen window etc (as long as it's not too hot and steamy  :))

I have found that they ripen OK as long as they have decent bit of stalk attached. Somewhere warm and bright and they turn light orangey colour and the skin toughens nicely.
Wisdom is knowing what to ignore - be comfortable in your own skin.

I picked some yesterday and the handles were breaking off some of them.  I'll have to use those first  :)

I brought a butternut home from the plot last weekend because the plant was dying.  It is slightly green so I have put it in the conservatory in the sun and it seems to be ripening.  If you eat them green they have very little, if any, flavour I have found.
