how to save Jerusalem artichoke to grow next year

we have some Jerusalem artichokes on our allotment, how do we go about saving some to move to another plot next year ?

They won't be ready to dig before the tops start dying off, possibly about late Oct early Nov. When you dig them select the ones you want to plant in the new plot and bung 'em in a pot or straight where you want them to grow. You can't lift them to store for later it just doesn't work.

Ideally, use tubers that are around the size of a robins egg (small), also take tubers from plants which have the least knobbly tubers. This way the smaller seed tubers tend to be more vigorous and over time you will reselecting tubers which are easier to prepare for the kitchen.

Absolutely easy, like weed. Theoretically. In practice, after the last 5 years of failure on my new plot, I'd advise to plant some in pots for spring planting, if autumn sown are eaten.
