I need 20 uses for cucumber

A fellow allotmenteer has just done a drop and run she is over run with cucumbers so she shared ( i'll return the joke believe me)  :ohmy:

So i now have 20 cucumbers, wasnt keen on the cucumber and apple ( sorry val) does anyone have an alternative apart from returning them  :lol:

Its a shame to waste them  ???

Well apart from pickling gherkin style until I ran out of jars and vinegar* as we have grown a (supposed) small variety this year, I've been making a quick pickle - in the style of quick red onion pickle - to go with meals quite often and I've now resorted to soup. At least that can get frozen. 57 picked so far and plants still going strong.

*Pickling vinegar isn't available locally yet as it isn't the right time yet.  ???

Delia's cucumber soup is nice - I tried it one year when I had plenty- never had enough since  :dry:

I rather fancy the mustard sauce too on the recipe section i have just seen, uses 2lb ummmmm maybe 20 batches of that one then haha

She'll be back tomorrow i bet. Daily cucumbers anyone. Se only has two plants and is keeping the whole site supplied  :unsure: goodness knows whats shes done to them  :lol:  i keep offering courgettes but they wont take them

I just made this yesterday and it is very nice, and amazingly, everybody in the family liked it.  I will make it again as I have a million so-called mini- cucumbers. :)

This is a nice very easy fridge pickle.  Its like a tangy salad really - good with mixed leaves, cheese and some crusty bread  :)

Sweet cucumber pickle from the River Cottage Preserves book
makes 2 x 450g jars

1kg cukes - finely sliced
2 small onions - finely sliced
1 tbp chopped dill or herb of your choice
250g granulated sugar
1 level tbsp salt
200ml cider viengar

Mix everything in a bowl, cover and leave overnight on the worktop to marinate.
Pack into jars or lidded plastic storage boxes and start eating\put in fridge for later.

Keeps for 2 weeks in the fridge :)

This is my favourite recipe for cucumber pickle - I have made quite a few jars so far this year and more to make. I will just copy and paste it as I typed it in the HLC area of the site.

This is the recipe for the Bread and Butter Pickle which I got from my cousin when I used to visit her in America. I think that it is one of those recipes that different people make in different ways.

Bread and butter pickle

3 large cucumbers.
3 tblsps salt.
4 onions - sliced.
1 pint white vinegar (some times I used a pickling vinegar for extra flavour).
6 ozs sugar.
1 tsp tumeric.
2 tsp mustard seed.

Place the sliced cucumbers, sliced onions and salt in a bowl and leave for about an hour. Rinse well. Gently heat the vinegar, sugar, turmeric and mustard seed until the sugar melts. Place the cucumber and onions in to sterilized jars, cover with the hot vinegar mixture and seal.

You can eat this almost straight away - but it tastes better if you keep it a couple of weeks. I always find it best to eat within about 2/3 months (and that was the advice given to me by my cousin) but I have seen comments on USA websites that if you water bath the jars it will last longer. Anyway in this house it gets eaten very quickly. Hope you enjoy it.

I do not peel mine - nor did my cousin. What i did do with a couple of cucumbers which had grown a little too big (what you get for going on holiday during the growing season) was to cut out the middle seedy bit. But with small cukes that is not necessary.

3 small cukes peeled and cut into chunks with seeds removed.

1 bottle gin

kilner jar

Combine cukes and gin. Store in cool, dark place for a week, ginving occasional shake.
Strain into bottle.

Pour into large glass with ice and tonic,

Just off to have some more....hic.... ;) :nowink:

Best gin I've had in ages....
