Blanching 'purple' green beans

Blanching 'purple' green beans

Hi All!  We are in the grip of a green bean glut.  Which is fine by me as I love them  :D  We have rather a lot of a purple and green striped variety 'selma zebra'.  If I blanch them for 2-3 mins the purple stripes will not have completely disappeared.  Will this matter when freezing and then cooking from frozen? Will they go a funny colour? :unsure: Cheers!

I only blanch sliced beans for 2 minutes and that's enough time for my purple beans to turn green ;)

and they are certainly green when cooked and served  :)

Thanks Mum!  I was worried that the purple colour may go black or something once frozen  :ohmy:.  I shall be blanching and freezing many, many beans tomorrow  ;)
