Just enough raspberrys for these.

Raspberry, blueberry and dark rum.  :tongue2: They were rather nice but I wish they'd rise evenly though  :(

Ooh, I promised my fiancé some more cakes etc now I am on school hols and these would be right up his street as he loves dark rum! Have you got a recipe? They look fab!

They don't look too uneven in your photo to me. Do you fill the cases evenly and equally before baking? I find if I take a little more time to do this, they do rise more evenly. But of course, hot spots in your cooker can also affect the way that they rise. :)

It would be nice on occasion to be able to cook something that didn't require "don't worry, it tastes much better than it looks" to be served with it  :nowink:

Have you got a recipe? They look fab!

I wasn't really paying too much attention I was on autopilot but It was much the same as the courgette cakes I was making earlier.

2 Eggs
80g sugar (I used granulated but I think demerara would probably give a richer taste)
80ml oil (I'm using mazola corn oil)
3 caps dark rum (Guessing it a teaspoon a cap)
120g 'ish' SR flour

Stuff all in a bowl - whisk
Add fruit  - Stir

Divide and cook.

I expect I'll get shot at dawn for my method  :lol: But this was complex cooking for me  ;)

That is my kind of baking! I love to cook - but I am more a chef than a baker as I don't like to measure things and be so precise - I go with the flow which doesn't really work with baking. I can bake quite well but I don't enjoy it so I only tend to do it when he sulks that he hasn't any brownies/muffins etc for a while!

Are you saying you think I should try some more, but without the fruit in Aunty ? and then perhaps some with the fruit on the bottom and then the fruit on the top....  All in the interests of science- I think that's what you're saying  :D  ;)

Where's Aunty's one  ::)

How silly of me - we must establish a control first. I can confirm that the same uneven results were recreated.

And I can't find the safe place where you put mine  :(

Someone must have taken it Aunty - I've put you another one from this batch in the same safe place.  :tongue2:

I will probably chop the raspberries next time rather than putting them in whole. Fiancé approved though asked me to double the rum haha!

I did cut mine in half, but mainly because I was trying to stretch them as I only had a few. I wonder if soaking the fruit in the rum would be nice?
