One marrow
2 eggs
3 tbsp plain flour
6 tbsp semolina
2 tbsp chilli flakes
300 ml oil for frying in
Salt and pepper to taste

Top and tail the marrow and peel with a grater. Slice lengthways and remove the core. Chop marrow in crescent moon shapes.

Beat the eggs in a bowl and set aside

Put flour in a large bowl and set aside

Mix semolina, salt and pepper and chilli flakes in a third bowl and line up all the bowls, flour bowl first, egg next, followed by semolina.

Heat oil until it can fry a cube of bread in a minute.

Drop marrow slices into flour, coat then in egg followed by the semolina. Fry until golden brown and drai. On kitchen paper, serve with your favourite dips and enjoy.

I love courgette fritters!  They're brill. Gorgeous with chips and mayo. Beetroot on the side of course  :)  Everyone I know loves them, even if they're not mad keen courgette eaters.  You can use curry spices in the batter for a bit of a twist  :tongue2:

They look lovely BQ, haven't been on til now been making gooseberry & mint jelly & picking the blackcurrants off the branches I 'pruned' yesterday. More jam coming I think.
