I found this with goo

Ingredients
2 lb cooked beetroot
1/2 pint water
1/2 pint vinegar
1 packet of raspberry jelly

NB These quantities are for 20 people
For home-use cut the quantities in half.
Keeping life is one week.

Method
Dice the skinned beetroot into cubes of about 1/4 - 1/2 inches. Place in a jelly mould.
Dissolve jelly in the 1/2 pint of boiling water.
Add the vinegar, stir and pour over the beetroot until it starts to float.
Allow it to set then turn out and serve with cold meats.

Quince! Do quince! you seriously won't regret it, it's unmentionably tasty. And chilli and apple is very, very, veeeeery moreish. (I am currently very hungry!)


I dont know anyone with quince available

it works with the ornamental ones as well as the 'proper' ones. PM me if you want to try some - Piero brought home as many as he could scavenge around suburbia last autumn so I have loads.

Surbie that sounds fab we dont have any quince around here, wonder if i could sneak a tree in, are they large trees.

Bob not sure if i fancy a rowntrees beetroot jelly lol

Call it a pre-baby present! And nope, the trees don't have to be, they just don't crop till they are about 5. Which I didn't know before I bought a 2-year one. Lots of people have the ornamental bushes in their gardens, because they are pretty and spiky. But they do nothing with the fruit. Not round here anyways.

Ahh thank you thats so kind. I am on the look out for a medlar tree too but seriously i have no room left.  :lol:

I need to find a quince that people dont want the fruit from. Wonder if i could ask on freecycle, whe. Are fruits ready.

Don't knock the beetroot in rowntrees jelly until you have tried it.  It's lush especially with cold meats and salad at this time of year.

Farmhouse Kitchen Recipe for Beetroot in Jelly

As Debz has said, this recipe uses jelly.

2lb beetroot
half pint white vinegar
6 cloves
6 peppercorns
A small bay leaf
half a packet of raspberry jelly

1. Wash beetroots and trim stalks to 1inch.
2. Boil beetroots in water until soft
3. Allow to cool, peel skin, trim ends.
4. Cut into half inch dice, pack into sterilised jars.
5. Place vinegar and spces in a pan and cover.  Bring to boil and simmer for 10 minutes, strain, discarding spices.
6. Pour onto the jelly and dissolve completely.  Cool slightly (don't allow to set)
7. Pour over beetroot covering completely.  When set, put on wax paper disc.  Screw on top.
