I have a hand blender but only give it a bit of a 'whizz'.  Love some texture in my soup.

I could eat Iron Soup every single day and never tire of it.

I have no idea what Evoo is so I don't add it. I also substitute fresh chopped chard for the spinach, and navy beans for the cannellini beans. I usually triple the recipe then freeze it in single serving containers.

Ooh, that sounds lovely Trillium, ta muchly (now bookmarked!).    Solved the EVOO mystery (after a bit of 'virtual furtling')  - extra virgin olive oil.

Many of the veg/cheese/spice combinations already mentioned and I also enjoy making a minestrone, where you can vary the bean/pulse and green ingredients depending on the time of year and what is available fresh.

Oh yeah, a minestrone!  Delicioso (I made that up!)   I grow my own cannellini beans which are a must-have in minestrone.

Or, in season, own peas or very small tender broad beans. But yes, normally, cannellini beans.


Another good soup is mushroom and kale - the nero di toscana,which imentioned in your thread on it,  being great cut into small strips across the leaf and just wilted in at the end.

   Ahhh, smart lady. Thanks for solving the mystery for me, funny since I was using olive oil anyway but didn't realize that was the name tag for it.

Butternut and peanut butter soup. Sounds a bit odd but genuinely an amazing soup!
