Oviously the set start of hard so how come they go so soft when sprouted?

Is this something to do with growing?

The bulbs filing with water in aid to grow etc?

The bulb is the food store of the plant to enable it to start growing roots and shoots - it shrivels up initially until it is able to make its own food and then starts bulking up again.
Sow your seeds, plant your plants. What's the difference? A couple of weeks or more when answering possible queries!
