freezing prepared horseradish
« on: January 30, 2013, 10:27 »
My husband is outside gigging up some horseradish and I am frantically searching the net for how to freeze it.

We are both sure that last time we did this we grated, mixed with vinegar sugar and salt and then froze it but I can no longer find how we did this. It was fantastic as we simply broke some off to use as we needed.

All the instructions I can find today seem to suggest that you either freeze it unprepared or you prepare it and store it in the fridge. We  prepared it and them froze it.

Has anyone any experience with this. If so I would love to hear from you.

All I have ever done is grate it and mix with a little salt and sugar then cover with vinegar, as you mention.  This is then stored in the cupboard, no need to freeze it.  It lasts ages.
