But do they ever stop completely? They can live to a good age, given the chance, and will continue to lay the odd egg here or there.......

One thing I have found (in my limited experience!) is that they will stop 'curtsying' when you approach them. If they are no long in lay then they stop being so submissive!

They can do that when they are in molt and not laying for the winter though.

I would wait until the Spring to assess if they are no longer laying due to old age.
