Jerusalem artichokes - "Gone With The Wind!"

Felt pretty gutted today. Had a magnificent first crop from organic tubers bought at the market but after trying them boiled, roasted, chipped, mashed and souped (and delicious they were too) peeled/unpeeled we all had so many wind problems that I had to chuck a load (in the green bag....not the compost!)
Typical! Such a bad growing year but the artichokes were huge and numerous........

If you try introducing small amounts the wind isn't so bad, but large quantities all at once definitely have that effect

Sometimes you just have to admit defeat.   :lol:  They grow annoyingly well here too, I've been trying to get rid of them for 4 years or is it 5..

I'll eat most things if they stand still long enough, all except JA's.

Apparently if you cook the fartichokes with winter savoury it stops this problem. Not tried it myself. I've nevere had a problem with them as part of a root vegetable bake

Roast JA's are amongst my favourite foods, but I won't eat them again, after the last time when I was so bloated by wind it actually hurt!  Evil things!

A polish chap my husband used to work with said that back home they eat them raw like young turnips, so we tried them raw, grated in a coleslaw - yum, yum and no after effects.

Try adding a little asafeotida (not sure about the spelling) when cooking (it's a spice that you can get from an asian store) .....it does work very well!! 8) 8)

I use that spice with all my Indian meals its meant to be great for tummies. Neve though of eating them raw sounds like a plan
