Stollen.
« on: December 19, 2012, 21:58 »
I've had a request (yes I think it's daft asking me to cook too) for stollen.

Any help before I resort to Gurggle.

Breadmachine version ideal as Im going to struggle to get anything to rise - it's rather cool in the house. Stop giggling in the back row !

You could make the dough in the breadmaker, but you'd have to take it out to get the marzipan layer into the middle ;)

I've just looked and can't find my recipe - but this one looks easy enough. Just bung all the ingredients into your machine and let it make the dough- take it out and let it rise, and continue as per recipe instructions............

Good luck

Does your machine tell you when to add the fruit for the last bit of kneading?
If so, you could do all of that in the machine, and even some of the rising, if you keep an eye on it..........

When the dough starts to rise up in the machine, take it out and flatten it gently for the marzipan continue from step 5 ;)

I always use Delia's recipe, which is nice.

I don't use a roll of marzipan tho' as I think it makes it too sweet, I cut the marzipan into 1cm chunks and knead them in at the end.

I don't use a roll either - I flatten out the marzipan into a sheet and roll it with the dough so it initially looks a bit like a yule log inside. If I don't do that I find that the stollen can be a bit dry.

It has a fruit and nutter hopper. Its the panni SD255.

Im going to be brave - If it all goes wrong I blame MoS, and as such she will be be responsible for the consumption of the results should they be sub standard.  Think I'll go with Surie100 marzipan suggestion too.

None at all     :D

I may have to let you off with some of the responsibility - turns out my cherries were best before May 2011 and my mixed fruit March 2012.

I'm sure the fruit will be ok - but I have concerns about the glace cherries, they have been in the fridge and there's no sign of anything growing on them.... risk it or not?

If they are glace cherries, they will have been preserved in so much sugar they will be fine.

Taste one and if you are still alive tomorrow, I'd risk it  :tongue2:

Seriously though, Mrs Ball is right.  Even canned foods have a best before date on them these days.  Preserved stuff is usually safe but may just have deteriorated in texture or flavour.  If they look and taste OK, they are OK  :)

How often do you clear your fridge out then you mucky pup  ::)

Back to snasbods tomorrow  :(

It showed promise... but failed to deliver.

Somehow the marzipan leaked out  like melted cheese - Piece of Stollenish anyone?
