i have some all year round coulis in,checked them today.1  had a head 6in across 2 others 4in,,can these stay over winter or should i crab them quick

I would crop them before they go to seed. They freeze well.

Ming you I'm no expert having never grown a decent cauli in my life.

If you can see the curd of a cauli, they need harvesting. They certainly won't sit all winter!
Did it really tell you to do THAT on the packet?

No only that but if they're like my caulis, the slugs will browse them and turn them horrible! >:(
