Can These Seed Potatoes Still Be Used?

Morning all

Found a couple of packets of seed potatoes in the garage this morning that I had forgot all about, they have chitted very well indeed lol, do you think they are still viable to use? Is there any of that growth that I should remove before planting?

I would - snap off the longest chits (which would probably break off anyway when planting) and as long as there are still a few shorter chits left (which looks to be the case) they should be fine, albeit late and therefore at greater risk from blight.
Sow your seeds, plant your plants. What's the difference? A couple of weeks or more when answering possible queries!

If you've got the space and nothing else to go in it then go for it.  You loose nothing.

But if you are running out of plot space, like me, then I wouldn't bother
Sometimes my plants grow despite, not because of, what I do to them.

I will snap the long shoots off and plant them, they are only going in bags so nowt to lose I suppose.

I got some last year from DIY store, they were selling off. The chits looked just like in your picture. Planted them deep in trenches first week in June, being careful not to snap stems. I got a decent crop of them. So I would definitely give it a go.
